Ingredients:

1/4 cup (60 ml) extra virgin olive oil

1/4 cup (60 ml) balsamic vinegar

1 (10 g) shallot, finely diced

1/4 tsp (0.25 g) cracked pepper

4 cup (400 g) mixed salad greens

1 (100 g) bunch fresh parsley, chopped

1 (250 g) punnet strawberries, quartered

(100 g) danish feta, crumbled

1/2 cup (70 g) pistachios

Directions:

1 In a small jar with a screw top lid, place the oil, vinegar, shallot and pepper. Screw the lid on tightly and shake vigorously until well combined.

2 In a large bowl, place the leaves and parsley. Pour over the salad dressing and using your hands, gently toss to combine. Add the strawberries and toss once more.

3 Serve the salad equally into 4 bowls and finish with the crumbled feta and pistachios.

Dynamic Bacon, Eggs & Mixed Greens

Ingredients:

4 (60 g) bacon rashers

4 (280 g) eggs, whisked

1 cup (100 g) mixed greens

1 tbsp (20 ml) extra virgin olive oil

1 tsp (5 ml) balsamic vinegar

1 tbsp (10 g) hemp seeds – Optional

Directions:

1 Heat pan over medium heat and add bacon. Cook until browned and crispy, 4 to 5 mins each side. Place bacon on a paper towel-lined plate and set aside.

2 Clean any bacon fat from the pan, reserving a small amount to cook the eggs in. Add the whisked eggs to the pan and stir the eggs frequently until cooked through. Season with salt and pepper to taste.

3 Divide the mixed greens between 2 plates and dress with oil and balsamic vinegar, then top with the hemp seeds. Share the cooked bacon and eggs between the plates.

Liver Cleanse Juice

Ingredients:

4 (800 g) green apples

2 (260 g) beetroots, peeled

4 (680 g) carrots

1 (170 g) lemon, peel & pith removed

1 (80 g) lime, peel & pith removed

Directions:

1 Put all ingredients through a juicer and serve over ice.
